!±8± Spicy Seafood Salad Recipe

Seafood is one of the best sources of proteins and omega oil, making it a winner when it comes to nutrition. This dish is easy to prepare and is excellent for parties and entertainment.

Ingredients

400 g squid
400 g octopus
400 g shrimps
400 g scallops
400 g crab meat
30 g butter
300 millilitre olive oil
15 cherry tomatoes
1 small onion, cut into 1 centimetre pieces
3 tablespoons chopped parsley
3 tablespoons chives
4 tablespoons vinegar
2 cloves of garlic, grated
1 cos lettuce
1 teaspoon red chilli powder
Salt and pepper

For Vinaigrette

Half cup olive oil
Half cup white vinegar
2 tablespoon lemon juice
Salt and pepper

Preparation

-Cook the octopus and shrimp separately in a saucepan with water, salt and pepper until tender (depending on the size of the octopus and the shrimp). Keep aside to cool.
-Cook the squid and scallops separately in a fry pan with melted butter and stir fry till they turn opaque.
-Cut the cooked seafood into bite-sized pieces.
-In a fry pan, stir-fry onions for 5 minutes at high heat. Remove from heat and let it cool and then add garlic, olive oil, vinegar, parsley, chives and chilly powder.
-Add the cooked seafood to the onions and mix well.
-Prepare vinaigrette by mixing the olive oil, white vinegar, lemon juice and enough salt and pepper.
-Wash and dry the lettuce and add the vinaigrette.
-Serve by spooning the seafood mixture on top of the lettuce.
-Garnish with cherry tomatoes, chives and parsley.

Whenever Koreans are hungry, but not that hungry, they make pajeon to satisfy themselves until it's dinner time. Here's how to make Pajeon.

Here are the ingredients that you will need: a bundle of green onions, onions, carrots, seafood of your choice, water, flour, eggs, soy sauce, salt and sugar.

First we need to make the batter for the pajeon. Mix a cup of water, a cup of flour, an egg, soy sauce, salt, and sugar into a bowl. Whisk until everything becomes smooth and there are no lumps of flour in it. If you do not want to make your own batter, you can simply buy the mix from a Korean market. Leave it aside for a little bit. Now we have to prepare the ingredients that will go into the batter. Roughly chop the green onions, onions, and carrots and leave them aside.

I know that almost everyone has had potato pancakes but did you ever try zucchini pancakes? When I was a child I was a very picky eater and there was very little things that I would eat; my favorite was potato pancakes. I just loved them so much I could eat them every day, so one day I came home from school and my mother had potato pancakes or so I thought. I sat down to dinner and began eating my favorite food but something seemed a little strange. I said to my mother, "these pancakes taste different" and she said "I used a different kind of potato this time" and so I was satisfied with her explanation and kept on eating my fill as usual. When dinner was over she asked me how I liked dinner and I said it was wonderful as usual, then she replied these were a new zucchini pancake recipe that she just got from a neighbor and decided to try it on me. I was never so surprised in my life and since then I have been making the same zucchini pancake recipe and now I am passing it on to you.

1-3 pound zucchini
½ to ¾ cup flour
1 large egg
½ tsp. Salt
Pinch of pepper or as you like it
Some graded onion (optional)

Wash and peal the skin from the zucchini, slice it down the center, remove the seeds from the center and shred the zucchini into a large bowl and add one egg, salt, pepper, and flour. Mix all the ingredients together.

In a large skillet place about a ¼ inch of oil or even a little less (as you prefer) on your range until hot enough to fry in, place the pancake batter in the frying pan a couple of spoons at a time until you reach the desired size of each zucchini pancake, let fry until a golden brown on each side is reached and the pancake is crispy around the edges, remove the pancakes from the pan and place them on some paper towels to drain the oil from them and then enjoy.

This zucchini pancake recipe will probably be the best you ever had.

How to Make Pancake Batter

!±8± How to Make Pancake Batter

Instead of buying instant pancake mixes, you can make your own pancake batter with some common ingredients in the kitchen.

Take a large bowl and mix two cups of flour with 2 tsp. of sugar (granulated) thoroughly by stirring the contents well. You can sift the flour or use presifted one for getting best results. To this, add 1 teaspoons of baking soda and 2 teaspoons of baking powder along with salt (about ½ tsp.). Stir the contents thoroughly.

Take another large bowl and combine 1/2 cup of whole milk along with two cups of buttermilk as well as two large eggs. Buttermilk is an important ingredient as it makes the pancakes fluffy and light. Use a wire whisk and combine the ingredients well by beating the mixture in the bowl.

Now add the contents of this bowl to the flour mixture and stir it gently. Do not mix too much. You would see that the mixture develops some lumps. But these would get cooked later while you prepare pancakes.

Now leave the batter aside uncovered for around five to ten minutes, until it thickens considerably. If it becomes too thick, you may add water as required to get the desired consistency.

On a preheated griddle, ladle ¼ cup of this pancake batter and cook for about 2 - 3 minutes either side. You need to turn when the side touching the griddle becomes golden brown and the side away from the griddle has bubbles covering it.

You can add spices like cinnamon or fresh fruit or even chocolate chips. If you just pour the same batter in a waffle maker, then you can prepare delicious waffles.

Green onion pancake

www.maangchi.com I picked some wild green onions in Inwood Hill Park and made this pancake. You can use any type of green onions for this. Enjoy the recipe! Ingredients (for 1 rectangular pancake about 6×7 inches): Green onions, flour, water, soybean paste, sugar, and vegetable oil. Directions: 1. Clean, wash, and drain a handful of wild green onions (or about 10 stalks of normal green onion). 2. Cut them into 5 inch long pieces. 3. Make batter by mixing ½ cup flour, ½ cup water, 1 ts soybean paste, and ½ ts sugar in a bowl. Mix well until the batter is smooth. 4. Place a non-stick pan on the stove and heat it up. 5. Add about 3 tbs vegetable oil to the heated pan. 6. Put the green onion on the pan parallel to each other, in the shape of a rectangle. 7. Pour the batter over the green onion evenly. *tip: If you want some seafood (chopped squid, mussels or fresh oysters) in your pancake add it on top of the green onion before pouring the batter. 8. While the pancake is being cooked, keep patting it, pressing it slightly, and keeping it in a nice shape with your spatula. 9. A few minutes later, when the bottom of the pancake turns crispy and golden brown, turn it over. 10. Cook a few more minutes until the bottom of the pancake turns crispy and golden brown again, and flip it or turn it over. 11. Cook another minute and transfer it to a serving plate. 12. Vegetable pancake (ya chae jeon)

Or Korean pizza, which I like to call this! Obviously, I love pizza. I can't deny that and the Korean version is a classic Korean food. And no, you won't find melted cheese with pepperoni but something crispy with some seafood. I remember eating this in Korea with some soju (Korean liquor). I could not get enough of it! Although there a lot of different versions in restaurants. This Korean Recipe is the basic one.

Ingredients: ½ cup of flour, 2/3 cup of water, 2/3 cup of chopped scallops or other seafood, green onions, asian chives (or regular chives if you can't find), zucchini , green chili pepper, 1 ts salt, 1 egg, vegetable oil.

Let's cooking the yummy Korean Recipe:

* Place ½ cup of flour, 1 ts salt, 2/3 cup of water in a big bowl and mix it.

* Chop ½ cup of green onions, 1 cup of asian chives and shred ½ cup of zucchini.

* Put chopped vegetables into the mixture of flour and water and mix it up.

* Chop 2/3 cup scallop. I put also some mini shrimp of same amount.

* In a big heated pan, put some oil and spread the vegetable pancake batter thinly. Lower the the heat

down to medium.

* Place the chopped seafood over the top and press it down with a spoon or spatula.

* When the pancake is cooked about 70%, beat one egg and spread it in the center of the

pancake and cook a few minutes over low heat.

* Turn the pancake over with a spatula.

* Add more oil and cook for few minutes. And serve it hot with dip sauce.

Tip: to make crispier, add more oil and spread the pancake mixture thinly.

Dip sauce: mix 1 TBS of soy sauce and ½ TBS of vinegar.
