Another one of the many side dishes that Koreans enjoy is Pajeon, or green onion pancake. This dish is relatively easy to make, it's just that there are a lot of ingredients that go into making pajeon. Whenever Koreans are hungry, but not that hungry, they make pajeon to satisfy themselves until it's dinner time. Here's how to make Pajeon.

Here are the ingredients that you will need: a bundle of green onions, onions, carrots, seafood of your choice, water, flour, eggs, soy sauce, salt and sugar.

First we need to make the batter for the pajeon. Mix a cup of water, a cup of flour, an egg, soy sauce, salt, and sugar into a bowl. Whisk until everything becomes smooth and there are no lumps of flour in it. If you do not want to make your own batter, you can simply buy the mix from a Korean market. Leave it aside for a little bit. Now we have to prepare the ingredients that will go into the batter. Roughly chop the green onions, onions, and carrots and leave them aside.

Now we need to choose the seafood that will go into the Pajeon. Korean people will usually use small shrimp and squid, but you can put in almost anything into the Pajeon if you want to. Add the seafood that you chose and mix it with the batter.

Now put a little bit of vegetable oil on a frying pan on medium high heat. Pour enough batter each time to make a good circle and cook each side until they are golden brown.

I know that almost everyone has had potato pancakes but did you ever try zucchini pancakes? When I was a child I was a very picky eater and there was very little things that I would eat; my favorite was potato pancakes. I just loved them so much I could eat them every day, so one day I came home from school and my mother had potato pancakes or so I thought. I sat down to dinner and began eating my favorite food but something seemed a little strange. I said to my mother, "these pancakes taste different" and she said "I used a different kind of potato this time" and so I was satisfied with her explanation and kept on eating my fill as usual. When dinner was over she asked me how I liked dinner and I said it was wonderful as usual, then she replied these were a new zucchini pancake recipe that she just got from a neighbor and decided to try it on me. I was never so surprised in my life and since then I have been making the same zucchini pancake recipe and now I am passing it on to you.

1-3 pound zucchini
½ to ¾ cup flour
1 large egg
½ tsp. Salt
Pinch of pepper or as you like it
Some graded onion (optional)

Wash and peal the skin from the zucchini, slice it down the center, remove the seeds from the center and shred the zucchini into a large bowl and add one egg, salt, pepper, and flour. Mix all the ingredients together.

In a large skillet place about a ¼ inch of oil or even a little less (as you prefer) on your range until hot enough to fry in, place the pancake batter in the frying pan a couple of spoons at a time until you reach the desired size of each zucchini pancake, let fry until a golden brown on each side is reached and the pancake is crispy around the edges, remove the pancakes from the pan and place them on some paper towels to drain the oil from them and then enjoy.

This zucchini pancake recipe will probably be the best you ever had.

How to Make Pancake Batter

!±8± How to Make Pancake Batter

Instead of buying instant pancake mixes, you can make your own pancake batter with some common ingredients in the kitchen.

Take a large bowl and mix two cups of flour with 2 tsp. of sugar (granulated) thoroughly by stirring the contents well. You can sift the flour or use presifted one for getting best results. To this, add 1 teaspoons of baking soda and 2 teaspoons of baking powder along with salt (about ½ tsp.). Stir the contents thoroughly.

Take another large bowl and combine 1/2 cup of whole milk along with two cups of buttermilk as well as two large eggs. Buttermilk is an important ingredient as it makes the pancakes fluffy and light. Use a wire whisk and combine the ingredients well by beating the mixture in the bowl.

Now add the contents of this bowl to the flour mixture and stir it gently. Do not mix too much. You would see that the mixture develops some lumps. But these would get cooked later while you prepare pancakes.

Now leave the batter aside uncovered for around five to ten minutes, until it thickens considerably. If it becomes too thick, you may add water as required to get the desired consistency.

On a preheated griddle, ladle ¼ cup of this pancake batter and cook for about 2 - 3 minutes either side. You need to turn when the side touching the griddle becomes golden brown and the side away from the griddle has bubbles covering it.

You can add spices like cinnamon or fresh fruit or even chocolate chips. If you just pour the same batter in a waffle maker, then you can prepare delicious waffles.
